This week I found 2 recipes while searching out soups on Pinterest and decided they both sounded good but that combined...they might be even better. As it turns out, I was right!
Creamy Chicken and Wild Rice is one of our favorite soups in this house but I've recently discovered a love of curries and have always loved coconut milk sooo all together they should make some magic no?
Well, let's see ;)
Ingredients:
2tsp olive oil
3 large carrots, peeled & chopped
3 stalks of celery, chopped
1 onion, peeled & diced
1 small chopped bok choy
1 tsp curry powder
1tsp cumin
1 1/2 cups wild rice mix
1 can coconut (Chaokoh is the best & yummiest- get it!)
8 cups chicken broth
2 cups diced cooked chicken breast
Chop veggies, throw in pot & saute in oil until soft, translucent and slightly brown
Cook chicken while veggies are cooking
Add cumin & curry to veggies when done sauteing and stir to combine.
Add the rice & broth
Bring to a boil and reduce heat.
Add the chicken & coconut milk; simmer for 1-2 hours or until the rice is tender.
Season with salt and pepper and enjoy!
The flavors of this soup are mild (so don't be afraid of the curry powder, I promise) and work together so well- it's delicious!

this does look awesome. i wonder if you could do it in the slow cooker too?
Yummm! I have some recipes I've been meaning to try soon especially using the slow cooker.
